Tiny House Fried Rice
Ingredients:
Rice
Parsnip
Carrots
Celery
Chicken
Steak
Soy Sauce
Ginger
Onion
3 eggs
Olive Oil
Garlic
Directions:
- Cook rice according to package directions in a large pot. When rice is done, drain and allow to cool in a small separate bowl (I cook for one…with enough for a second helping).
- Beat eggs. Throw beaten eggs into large pan that rice was just cooked in. Remove from pan and set to the side to cool.
- Turn stove on medium heat. Put in Olive Oil. When Olive oil is warmed, toss in onions. Cook until brown. While that is cooking, I diced parsnips, carrots and celery. I threw those in the pan with some garlic until garlic was brown.
- While those were cooking I diced up the meat and threw the meat in the pan. I tossed in soy sauce and ginger to taste.
- Once the vegetables were a crispy tender, I threw in the rice in the pan. I added some additional soy sauce and some balsamic vinegar I had on hand.
- I chopped up the pre-cooked eggs and added them to the mix in the large pan.
- Serve.
